Viticulture and winemaking has existed in Slovenia since the time the Celts and Illyrians resided in this area, long before the Romans would introduce winemaking to the lands of France, Spain, and Germany. Clearly ignorant of the ancient winemaking tradition in the Lipoglav hills, French Carthusian monks planted Pinot Noir and Chardonnay in the 12th century and the rest, as we shall say, is history. The Podkubovšek family has always cherished and been proud of this gentrified local heritage, hence the fact that all of their wines are made in a traditional style. And in the spirit of “what’s old is new,” Sanctum has managed to create some otherworldly examples of their two favorite grape varieties while observing minimal intervention to bring you a lean, clean, and not too mean Pinot that’s great to drink on the putting green or to enjoy with a cornucopia of foods.
