Important note: this interesting and mysterious wine from the Dalmatian coast is not a pop and pour.  It’s like a wild animal that needs to be tamed with time and breath work.  We suggest trying it right out of the bottle, but then give it a bit of time to come into its own (30 minutes should be fine).  Croatia has long tradition in winemaking, some of its cellars tracking its history in the distant past. The local scene has a strong identity of perseverance and local tradition. The region of Dalmatia stretches across the eastern Adriatic shores and is especially productive, thanks to Mediterranean climate and expertise of its inhabitants. Ivica Piližota is the humble owner of his namesake winery in the inland locations surrounding the historic town of Šibenik, in Central Dalmatia.  This 100% Babić is hand-harvested, de-stemmed, and spends approximately 10 days macerating on the skins.  Serve slightly chilled at your next sausage party.
